We LOVE all kinds of Thai food so we decided to make this tonight. This recipe was VERY loosely based on this recipe I saw online. Here’s what we did.
We sautéed the chicken in a large pan with Trader Joes coconut oil and added some chopped Thai chili pepper and a chopped habanero – seeds and all!
4 oz of green curry paste and Trader Joes light coconut milk were whisked together and then after a few minutes, they were added with some chopped sweet red bell peppers, scallions, cilantro, and basil.
Simmer for about 5 minutes.
While this simmered, we spiralized our zucchini. We cut then up a little so it’s easier to eat. Leave them ready to add in shortly.
A little fish sauce, chili paste, and puréed fresh ginger were added in as well as some mixed corn starch to thicken it up.
Plate and add a little bit of fresh cilantro and basil.
